Meredith's Caviar Pasta

Ingredients (Serves 2)
8 oz artisanal pasta (Meredith loves bucatini but choose your favorite)
2 tbsp cold-pressed extra virgin olive oil
2 tbsp unsalted butter
1 tbsp lemon juice
1/2 cup white wine
3/4 cup heavy cream
Fine sea salt, to taste
Freshly ground black pepper, to taste
1 oz of your favorite Meredith Marks Caviar (Diamond Ossetra)

Instructions

  1. Cook the Pasta – Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente. Reserve a small amount of pasta water before draining.
  2. Prepare the Sauce – Add unsalted butter to a pan and heat it on medium until melted. Whisk continuously to prevent browning. Add in lemon juice, dry white wine, and heavy cream. Bring the mixture to a boil and let it simmer for five minutes to thicken.
  3. Dress the Pasta – In a serving bowl, gently toss the pasta with the prepared sauce, ensuring even coating. Season with sea salt and freshly ground black pepper to taste. Add a splash of reserved pasta water if needed for a silky texture.
  4. Plate with Elegance – Twirl the pasta into nests on each plate, creating a lovely presentation.
  5. Garnish & Serve – Drizzle with extra virgin olive oil, sprinkle with fresh chives, and serve immediately. Pair with a glass of dry white wine or chilled vodka for the ultimate indulgence.
  6. Crown with Caviar – Finish with a generous spoonful of Meredith Marks Diamond Ossetra Caviar, allowing its delicate brininess to meld with the warmth of the pasta.
